A soft, elegant take on the world's most celebrated red. Cabernet Sauvignon is the noble grape of Bordeaux, planted right across the globe, yet rarely grown as high or as cool as it is here. Grown on the undulating slopes of Canyonleigh in the cool-climate Southern Highlands, our single vineyard expression is soft, elegant and full of regional character.
The fruit was harvested at optimal ripeness to capture the variety's red-berry character while preserving freshness and elegance.

Our cool-climate Cabernet is elegant and savoury rather than big and firm, which makes it a wonderfully versatile food red. Its red fruit, fine tannins and gentle herbal edge suit roasted meats and earthy, savoury dishes especially well.
Red Meat: Roast lamb, grilled sirloin, slow-braised beef cheek, venison
Poultry and Game: Roast chicken, duck breast, quail, glazed turkey
Mushroom and Earthy: Wild mushroom risotto, mushroom pasta, lentil ragù, truffle dishes
Charcuterie: Prosciutto, salami, coppa, country pâté
Cheese: Aged cheddar, gruyère, parmesan, washed-rind styles
Serve at 16 to 18 degrees in a large red wine glass. Decant for around 30 minutes to let the aromatics open up. Drinking beautifully now, with the structure to develop further over the next few years in the cellar.
