• A soft, elegant take on the world's most celebrated red. Cabernet Sauvignon is the noble grape of Bordeaux, planted right across the globe, yet rarely grown as high or as cool as it is here. Grown on the undulating slopes of Canyonleigh in the cool-climate Southern Highlands, our single vineyard expression is soft, elegant and full of regional character.

    The fruit was harvested at optimal ripeness to capture the variety's red-berry character while preserving freshness and elegance.

    Grown on a single block at PepperGreen Estate, this wine reflects the unique terroir of Canyonleigh altitude, cool nights and the conditions that give our reds their elegance and fine structure.

    Crafted with a considered, minimal-intervention approach to let the fruit and site speak for themselves. Made to be enjoyed now, with the structure to reward a few years in the cellar.

    Tasting Notes

    • Mid-red with a garnet tinge in the glass.
    • Nose presents notes of raspberry, redcurrant and a hint of blackcurrant.
    • Red fruits and dried herbs on a soft, medium-bodied palate with fine tannins.

    Our cool-climate Cabernet is elegant and savoury rather than big and firm, which makes it a wonderfully versatile food red. Its red fruit, fine tannins and gentle herbal edge suit roasted meats and earthy, savoury dishes especially well.

    Red Meat: Roast lamb, grilled sirloin, slow-braised beef cheek, venison
    Poultry and Game: Roast chicken, duck breast, quail, glazed turkey
    Mushroom and Earthy: Wild mushroom risotto, mushroom pasta, lentil ragù, truffle dishes
    Charcuterie: Prosciutto, salami, coppa, country pâté
    Cheese: Aged cheddar, gruyère, parmesan, washed-rind styles

    Serving Suggestion

    Serve at 16 to 18 degrees in a large red wine glass. Decant for around 30 minutes to let the aromatics open up. Drinking beautifully now, with the structure to develop further over the next few years in the cellar.

Two bottles rather than one, because that is how we use it. Cook with the first, keep the second for finishing, and taste the difference between the two applications. Cold-pressed, unfiltered and bottled on the estate. The linen tea towel is a good one, not a novelty.   • Our Olive Leaf Gin is distilled using leaves picked from the same trees that give us our Extra Virgin Olive Oil. It only makes sense if you grow both, which is exactly why you will not find it anywhere else. The leaves bring a savoury, herbal note that sits underneath the juniper rather than competing with it. Distinctly of this place, and a long way from a standard London Dry.   Tasting Notes Pale green in the glass with a soft olive cast. Juniper and citrus peel on the nose, with a green, herbal note underneath. The palate is dry and savoury, finishing clean with a subtle bitterness that comes directly from the leaf. Serve simply. Good tonic, plenty of ice, and a strip of lemon peel or a green olive. It also makes an excellent Martini for anyone who takes theirs dry. 500ml.
