Pinot Gris, not Pinot Grigio. Same grape, entirely different intention. Where Grigio is made lean and crisp for drinking fast, Gris is left to ripen and build texture and this is the fuller, silkier end of the family. Grown on a single cool-climate block in Canyonleigh, it is the textural white a winter table has been waiting for. The fruit was left to hang into the cool Southern Highlands autumn, building the ripeness and weight that give this style its texture while the altitude held on to the natural acidity underneath. Grown on a single block at PepperGreen Estate, this wine reflects the unique terroir of Canyonleigh altitude, cool nights and the conditions that give our whites their distinctive drive and character. Crafted with minimal intervention to let the variety speak for itself.Tasting Notes
- A subtle bronze in colour.
- Nose presents dried tropical fruit, pineapple and ripe pear, with a whisper of musk.
- Rich, silky and textural on the palate with ripe pear and warm spice, carrying to a long, smooth finish.
Awards
- 2026 London Wine Awards Silver
Food Pairing
This is a white with enough weight and texture to sit beside cold-weather cooking. Where a lighter white would disappear, the Gris holds its ground against cream, butter, roasted flavours and gentle spice. Pasta and Risotto: wild mushroom risotto, creamy pappardelle, pumpkin gnocchi, carbonara Roasts and White Meats: roast chicken with thyme, slow-roasted pork belly, crackling and apple, veal schnitzel Richer Seafood: seared scallops, prawns in garlic butter, smoked trout, fish pie Spice: Vietnamese and Thai salads, mild curries, five-spice duck pancakes Cheese: semi-hard cheeses, Comté, gruyère, aged gouda, washed rindServing Suggestion
Serve at 10 to 12 degrees in a medium-sized white wine glass. A touch warmer than you would pour a crisp white -served too cold, the texture and spice that make this wine what it is go quiet. Give it ten minutes out of the fridge and let it open. The 2023 Pinot Gris is currently featured in our Tasting Room paired with wild mushroom and parmesan risotto. One of the most rare and exciting white wines we have produced. Arneis is an ancient Italian variety from the Piedmont hills, once nearly lost to history and still exceptionally uncommon in Australia. Grown at altitude in the cool-climate Southern Highlands, our single vineyard expression is aromatic, food-friendly and utterly distinctive.
The Arneis was harvested at optimal ripeness to preserve the variety's natural aromatics and freshness.
Grown on a single block at PepperGreen Estate, this wine reflects the unique terroir of Canyonleigh - altitude, cool nights and the conditions that give our whites their distinctive drive and character.
Crafted with minimal intervention to let the variety speak for itself. Unoaked and made to be enjoyed young while its florals are at their most expressive.
Tasting Notes
- Chiffon yellow in colour.
- Nose presents notes of delicate honeysuckle and white florals
- Fresh pear, white peach and subtle almond on the palate
Food Pairing
Arneis is one of the most naturally food-friendly white wines you will encounter. Its freshness and gentle aromatic lift complement a wide range of dishes, particularly those with a little richness or Mediterranean influence.

Pasta and Risotto: creamy risotto, crab linguine, mushroom pasta, gnocchi with sage butter
Light Mains: Pan-seared barramundi, roast chicken, veal with salsa verde
Antipasto: Burrata, prosciutto, marinated artichokes, grilled asparagus
Cheese: Fresh buffalo mozzarella, young pecorino, mild goat's cheese
Serving Suggestion
Serve chilled at 8 to 10 degrees in a medium-sized white wine glass. Best enjoyed young and fresh, while its delicate florals and stone-fruit aromatics are at their most expressive.
