- Intense ruby red in colour
- Cedar and leather aromas on the nose
- A rich and powerful palate, finishing with an abundance of nice dry tannin
- A cool climate Shiraz with cellaring potential
Food Pairing
Shiraz with this much structure loves rich, savoury food. Its dry tannins are softened by protein and fat, so it suits slow-cooked and grilled dishes best. Red Meat: Slow-braised beef cheek, lamb shoulder, rib-eye with peppercorn sauce Game and Charcuterie: Venison, duck breast, smoked meats Hearty Mains: Beef and mushroom pie, wild mushroom risotto, aged-cheese lasagne Barbecue: Slow-cooked ribs, steak, spiced lamb cutlets Cheese: Aged cheddar, gruyère, hard aged cheesesServing Suggestion
Serve at 16 to 18 degrees in a large red wine glass. Decanting for 30 to 60 minutes will help the aromas open up and soften the tannins. Enjoy now or cellar with confidence. Purchase a case of wine and receive a 10% discount (includes mixed varietals) at checkout. -
A soft, elegant take on the world's most celebrated red. Cabernet Sauvignon is the noble grape of Bordeaux, planted right across the globe, yet rarely grown as high or as cool as it is here. Grown on the undulating slopes of Canyonleigh in the cool-climate Southern Highlands, our single vineyard expression is soft, elegant and full of regional character.
The fruit was harvested at optimal ripeness to capture the variety's red-berry character while preserving freshness and elegance.
Grown on a single block at PepperGreen Estate, this wine reflects the unique terroir of Canyonleigh altitude, cool nights and the conditions that give our reds their elegance and fine structure.
Crafted with a considered, minimal-intervention approach to let the fruit and site speak for themselves. Made to be enjoyed now, with the structure to reward a few years in the cellar.
Tasting Notes
- Colour: Mid red with a garnet tinge.

Medium red colour with a little purple. Fragrant nose, with violets, red berries and leafy overtones. Medium body. Elegant berry flavours, finishing with a fine tannin grip. Awarded 2021 Silver - Sakura Japan Women's Wine Awards 2020 Silver - The Real Review Recommended 2020 Top Rank - The Real Review Recommended Ranked #4 of 17 for 2018 Cabernet Sauvignon from New South WalesTasting Notes
- Medium red colour with a little purple.
- Fragrant nose, with violets, red berries and leafy overtones.
- Medium body.
- Elegant berry flavours, finishing with a fine tannin grip.
Instantly savoury and under-stated. Aromatics are more Old World than primary and berry driven - spicy oak, dried herbs and just enough flesh and ripeness to match the structure. Something undeniably compelling about this wine. Wrestling for ripeness in an Australian sense, though lovers of Bordeaux would perceive no deficiency. A delicate, long finish with ripe tannins. Meet "The Early One". Tempranillo takes its name from the Spanish word temprano, meaning early, because it ripens before every other red in the vineyard. The grape behind Rioja finds a fresh Australian voice in our Southern Highlands Tempranillo: medium bodied, food first and made for the table.
The Tempranillo was harvested at optimal ripeness, living up to its name as the first red off the vine, to capture the variety's bright fruit and natural spice.
This wine follows in the footsteps of our Gold Medal-winning 2021 Tempranillo, recognised in Tokyo at the Sakura Wine Awards alongside wines from Rioja and Bordeaux.
Crafted to let the variety speak for itself. The just-right red for those who find Shiraz too big and Pinot too light.
Tasting Notes
- Dark ruby red in the glass.
- Plum and spice on the nose.
- Rich plum and Mediterranean herbs on the palate.
- Succulent complexity and a soft, lingering tannin finish.
